Curd: An Elixir for Good Health-Helps in Prevention of Many Diseases
A daily bowl of curd or yogurt is, an elixir of good health and helps in the prevention of many diseases. Curd is considered as a natural healing, nutritious and tasty food. It is a semisolid sour preparation of milk made by its fermentation. It can be eaten plain or with addition of fruits, vegetables, salt, pepper, roasted and powdered cumin, in order to make a tasty complimentary dish to many recipes.

- Curd has a higher antioxidant activity as measured by the ability to scavenge free radicals, which is due to the lactobacillus present in it. These bacteria act as natural scavengers and also help in regulating glucose metabolism and fat metabolism, thereby helping in lowering blood glucose and lipid levels. Many studies have shown that change in the gut microflora by probiotics helps in improving type 2 Diabetes mellitus and cardiovascular disease.

- Lactobacilli in curd have an antimicrobial effect, which is mainly due to the production of organic acids, such as lactic acid, acetic acid, propionic acid, and sometimes hydrogen peroxide. These acids denature the proteins and cause DNA damage, rapidly killing the other microbes.
- Curd is generally considered an excellent source of high-quality protein, calcium, potassium, phosphorus, magnesium, zinc, and the B vitamins riboflavin, niacin, vitamin B-6, and vitamin B-12. Folate and B 12 are two vitamins which are synthesized by the bacteria used for making curd.
